  • 1 medium onion, finely chopped
  • 1 tsp olive oil
  • 2 large eggs
  • 3 garlic cloves, minced
  • 2 Tbsp ketchup
  • 3 Tbsp fresh parsley, finely chopped
  • 3/4 cup Panko breadcrumbs (or gluten-free bread crumbs)
  • 1/3 cup milk
  • 1 tsp salt (or to taste)
  • 1 tsp Italian seasoning
  • 1/2 tsp ground black pepper
  • 3/4 cup ketchup (for glaze)
  • 1 ½ tsp white vinegar
  • 2 Tbsp brown sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  1. Line a rimmed baking sheet with parchment paper or foil for easier cleanup. Preheat the oven to 350°F.
  2. In a medium skillet over medium heat, add 1 tsp of olive oil and the chopped onion. Sauté until softened and golden (about 5-7 minutes). Transfer to a plate to cool.
  3. In a large bowl, add all of the meatloaf ingredients and mix until just combined.
  4. Place the mixture on the lined baking sheet and shape it into a meatloaf (about 8 inches long, 4 inches wide, and 3 inches tall). Bake uncovered for 40 minutes.
  5. In a small bowl, stir together the glaze ingredients.
  6. Spread the sauce over the meatloaf and return to the oven. Bake for an additional 20 minutes or until the internal temperature reaches 160°F. Let rest for 10-15 minutes before slicing.

Notes

For added flavor, consider mixing in vegetables like bell peppers or carrots. Don’t skip resting time to ensure easier slicing.
